The following dinner is a re-visioning, a "Redeaux" of sorts on some of our popular Cajun dishes that have been a part of our Dinner with the Chef series over the years. Each course offered has been served previously but to kick it up a notch each dish has been re-imagined with new preparations, additional sauces, and altered cooking techniques in an effort to teach, explore, and enjoy new possibilities. A "Redeaux" allows us to add to, delete from, or pair popular items in a new way with wines that complement and enhance the entire experience.
