Casado is not a singular dish but a marriage of foods that are served together. The individual foods are great but together they compliment the entire meal and like a strong marriage (Casado) adds to the enjoyment and complexity of the entire experience. This is the definition of a Costa Rican lunch served in restaurants called sodas. For this menu we will substitute the traditional black beans and rice with Gallo Pinto, a mixture of black beans and rice with fried red pepper and onion, that is normally served for breakfast with fried eggs. Although this dinner is three courses, we will be tasting seven authentic Costa Rican recipes. It's about sharing the Pura Vida, the secret to living longer, healthier, and happier!
