I am a big fan of Coastal Mexican seafood dishes. From Snapper Vera Cruz to Grilled Shrimp with Garlic, Peppers, and Lime, I love the fresh sauces that accompany all the meals. Heavily influenced by Spanish Basque cuisine, these Mexican/Spanish dishes focus on seafood and sauces. The fertile waters of the Gulf of Mexico yield exceptional fish, shrimp, and crab which are prepared with green sauces, garlic and oil sauces, with the generous use of tomatoes, avacado, other fresh vegetables, saffron and olive oil. Wines from Chile and Argentina will accompany our "South of the Border" selections finished with a simple cinnamon custard.
