The "French Quarter" menu is a selection of various Creole and Cajun dishes that I served during my time as a cook and chef at Pearl's Oyster Bar and No.1 Pearl Street Oyster Bar in both Dallas and Austin, Texas. During my tenure there we were recognized as one of the Best Cajun Seafood restaurants in both cities. The variety of cooking techniques, spices, and ingredients takes me back to one of my favorite places, the French Quarter in New Orleans.
